300 g smoked trout or salmon

600 g tomatoes, preferably in different colors and flavors

½ red onion

1-2 tsp salt

3 tsp sugar

Pepper

6 tbsp olive oil

2 tbsp balsamic vinegar

250 g fresh mozzarella

Fresh basil leaves

30 g pine nuts

Focaccia or other good bread

  • Cut the tomatoes and sprinkle with salt, sugar, and     pepper. Drizzle with olive oil and toss well.
  • Toast the pine nuts over medium heat in a skillet until lightly golden.
  • Slice the red onion thinly and cut the mozzarella into slices.
  • Arrange the tomatoes on a serving platter. Top with red onion slices, mozzarella slices, pine nuts, and basil leaves. Drizzle with balsamic vinegar.
  • Finally, place slices of smoked trout or salmon on top.
  • Serve with good bread on the side.
