Crostini

with smoked trout or salmon, avocado cream, and trout roe

Crostini is an Italian appetizer, and it pairs perfectly with salmon and trout. Slice half-baked baguettes into thin slices and toast them in the oven at 200°C for about 3 minutes until they are lightly golden. One baguette of about 20 cm yields approximately 30 slices.

100 g smoked trout or salmon

1 ripe avocado

1 small clove of garlic

½ lime

Salt, pepper

1 dl sour cream

50 g trout roe

¼ red onion

Fresh cilantro

  • Peel and mash the avocado into a puree, add chopped garlic and juice from half a lime.
  • Season with salt and pepper.
  • Spread the avocado cream on the crostini and top with smoked trout/salmon.
