300 g smoked trout or salmon

1 dl quinoa

1 avocado

4 eggs

4 spring onions

100 gedamame beans

1 apple

1/3 cucumber

½ redonion

½ mango

¼ melon (piel de sapo, honey quantalope)

20 cherry tomatoes

2 dl Greek yogurt

Croutons or other good bread

Instructions

  • Cook quinoa according to package instructions.
  • Boil eggs for 7 minutes (starting from cold), cool, and halve them.
  • Chop the rest of the ingredients. Mix them together or arrange them separately in a bowl.
  • Arrange slices of smoked trout or salmon and top with a few spoonfuls of yoghurt.
  • Serve with croutons,toast, or slices of good bread.
