with Smoked Salmon and Trout from Hofseth

300 g smoked trout or salmon

400 g pasta (e.g., tagliatelle)

2 shallots

2 tbsp butter

2 dl apple juice

3 dl cooking cream

2 dl crème fraîche

2 tbsp chopped sun-dried tomatoes

4 spring onions

2 dl frozen peas

About 1 tsp salt and some pepper

2 tbsp finely chopped chives

  • Cook the pasta in a large pot of salted water according to package instructions.While the pasta is cooking, prepare the sauce.
  • Finely chop the shallots. In a large skillet or saucepan, melt the butter over mediumheat. Add the shallots and sauté until translucent.
  • Pourin the apple juice, cooking cream, crème fraîche, and sun-dried tomatoes. Bringto a boil, whisk together, and let it simmer for about 3 minutes.
  •  Add the frozen peas and chopped spring onions to the sauce. Cook for anotherminute.
  • Seasonwith vinegar (if using), salt, and pepper to taste.
  • Drain the cooked pasta and add it to the sauce along with sliced smoked trout or salmon. Toss gently to combine.
  • Sprinkle chopped chives over the pasta and serve immediately.

If desired, you can add cooked asparagus pieces or steamed or cooked small broccolior cauliflower florets for additional vegetables.
